This is one you just have to try to believe. Don't let the ingredients scare you off. This is bread and it's quick, easy, cheap, and full of important nutrition. This recipe substitutes flaxseed meal for flour. Flaxseed is rich in those elusive omega-3 fatty acids which fight inflammation in your body. It's high in most of the B vitamins, magnesium, and manganese, fiber, and antioxidants. This bread will not spike your blood sugar and will fill you up. Best of all, this bread tastes great! I just made this, and topped it with a bit of almond butter - delicious!
FLOURLESS MUG BREAD
¼ cup ground flaxseed meal
½ teaspoon baking powder
1 teaspoon cinnamon
1 large egg
1 tablespoon unsweetened applesauce
Put the flaxseed meal, baking powder, and cinnamon into a microwave-safe mug. Stir together until well mixed. Add the egg and applesauce. Mix until smooth. Microwave 2 minutes. Allow bread to cool slightly and remove from the mug.
