This Beef Mechado recipe uses lemon and tomato. I just like my beef to have tomatoe goodness in it. And lemon gives it the fresh , sour lemony flavour.
Total Time : 90 minutes.
Yields : 8 servings.
Ingredients :
* 1 and one-half kilo beef (strip of fat inserted)
* 4 pcs. Lemon (squeeze the juice)
* 5 tablespoon soy sauce
* 2 pcs. Tomatoes cubed
* One-fourth tomato sauce
* 1 large onion (sliced)
* 5 cloves garlic (crushed)
* 1 and one half cups water
* Salt to taste
* 1 teaspoon peppercorns
* 1 bayleaf
* 3 tablespoon all purpose flour (toasted)
* 2 tablespoon butter
* 2 potatoes quartered
* Olive oil
Method of Preparation :
1: Marinate the beef in lemon juice and soysauce. Keep overnight with the marinade still intact.
2: The following day, brown the beef in olive oil. Add diced tomatoes until tomatoes are tender.
3: Add bayleaf, onion, garlic, water, salt, and peppercorns. Simmer until tender.
4: Remove the meat from pan.
5: Slice beef and strain the sauce.
6: Thicken the sauce with tomato sauce, toasted flour and butter.
7: Add back the beef to the sauce and add potatoes.
8: Simmer until tender.
