Ingredients
1/2 cup butter
1 cup caster sugar
2 eggs
2 1/4 cups flour
1/2 tsp baking soda
1 cup mashed bananas (2-3 bananas)
1/4 cup sour milk (substitute: 2tsp vinegar add to milk and set aside for 10 mins)
1 tsp vanilla
Method:
- Preheat oven to 180 degrees.
- Cream butter and sugar together in a large bowl.
- Add eggs and mix well.
- Add flour and baking soda and mix until combined.
- Add bananas, milk and vanilla and mix well.
- Pour batter into two prepared 8 inch pans.
- Bake at 350 degrees for 25-30 minutes, or until a toothpick comes out with just a few crumbs.
- Cool in pan for 5-10 minutes, then remove to cooling rack to finish cooling.
