Palitaw Recipe

Palitaw is a small, flat, sweet rice cake eaten in the Philippines. Palitaw is made from malagkit or sticky rice washed, soaked, and then ground. Cooking Palitaw is very easy just scoop the Palitaw batter then dropped it into boiling water when it floats to the surface as flat discs it is an indication that they’re done.

Ingredients
  • 2 cups glutinous rice flour
  • 1 cup water
  • 1 cup grated mature coconut
  • 1/2 cup sugar
  • 1/4 cup sesame seeds
  • water
Instructions
  1. In a pan over medium heat, toast sesame seeds, stirring frequently, for about 30 to 45 seconds or until lightly browned and fragrant.Remove from heat and allow to cool. In a bowl, combine toasted sesame seeds and sugar.
  2. In a bowl, combine rice flour and water and mix into a soft, pliable dough. Shape into flat, oval disks.
  3. In a pot over medium heat, bring about 5 inches of water into a rolling boil. Gently and individually drop shaped dough into the boiling water. Do not overcrowd pot. When cakes float to surface, remove from water using a slotted spoon and drain well. Arrange on a parchment-lined platter in a single layer and allow to cool.
  4. In a shallow dish, roll cooked palitaw on grated coconut to fully coat. Sprinkle with sesame-sugar mixture before serving.
Notes
To prevent dough from sticking, wet hands in between shaping dough into patties.
