A delicious favorite delicacy in the city of Cavite, the sweetened munggo or mung bean are smashed and packed inside the glutinous rice dough. Bake and serve with creamy tapioca pearl and jackfruit in coconut milk.

- 3 Cups Glutinous flour
- 3/4 Cups sweet potato flour
- 1 3/4 Cups water (approximately)
- 1 Cup white sugar
- 1 Cup mung beans
- 1/2 Cup ripe jackfruit
- 1/2 Cup tapioca pearl
- TAPIOCA PEARL
- Boil a small pot of water and add sago.
- Then simmer for 15 minutes or until done.
- Strain and put in a running water, set aside.
- SWEETENED MUNG BEANS
- Soak mung beans for 30 minutes in water before cooking.
- Boil mung beans in water until soften.
- Keep stirring and mash the beans until it turns to a paste.
- Add white sugar, stirring and cook for another few minutes.
- Set aside, and let it cool in the refrigerator.
- BIBINGKOY
- Preheat oven to 350 degrees
- Mix together the glutinous rice flour, sweet potato flour and water to make a dough.
- Divide the dough into two equal portion.
- Grease the baking pan, put 1 part of the dough and flatten to cover the bottom of the pan.
- Scoop 1 tablespoon of sweetened mung beans and arrange in a straight line over the dough.
- Flatten the other part of the dough on an oiled plastic place mat.
- Flip the dough over to the baking pan to cover the other part.
- Press dough in between the fillings to secure each sweetened mung beans mixture.
- Remove the excess dough on the side of pan and brush the top with coconut milk.
- Bake for 10 minutes and broil for another 10 minutes or until top turn golden brown.
- Pour the creamy toppings over the Bibingkoy and serve.
- TOPPINGS
- Pour coconut milk in a deep sauce pan.
- Add ripe jackfruit and cook over in medium heat.
- Keep stirring, add the cooked tapioca pearl.
- Let it simmer for another few minutes or until thicken.
- Cooking Tips
- If sweet potato flour is not available, used mashed taro of the same measurement.
- For a better result, used Halo-Halo mix in a bottle as the substitute for ripe jackfruit.
- No need to soak, if using yellow cracked mung beans.
- Used coconut milk or melter butter in brushing the top before baking.
- Add sugar for a sweet topping, but not on the bottled Halo-Halo mix.
