Roasted Garlic & Rosemary White Bean Spread


Hummus is my jam, y'all.  If you are ever in doubt as to what to feed me, a very safe bet would be hummus.  It goes with everything - salad, sautéed vegetables, plantain chips, zoodles, cucumber slices, nori sheets, apples or pears, by the heaping spoonful, etc.  You get my drift.  And while hummus is traditionally chickpea based, I love to substitute other beans to make hummus inspired spreads.  It offers new possibilities in terms of flavor, texture, and nutritional benefits, and very importantly, keeps me from burning out on one of my dietary staples.

Today's recipe is a simple and delicious riff on roasted garlic chickpea hummus with the addition of fresh rosemary to take full advantage of my Winter herb garden.  And just in time for parties involving watching halftime shows, commercials, and football.


Roasted Garlic & Rosemary White Bean Spread
Gluten Free & Vegan

Active Prep Time: 5-10 minutes
Inactive Prep Time: none needed
Cooking Time: none
Yield:  approx. 2 cups

(1) 25 oz can Cannellini beans, drained
1/3 c roasted garlic cloves
1-2 cloves raw garlic, chopped
3-5 sprigs fresh rosemary
juice of 1/2 lemon (approx. 3-5 teaspoons)
1/2 teaspoon fine pink sea salt
2 pinches cayenne (optional)

2-3 tablespoons olive oil

olive oil and smoked paprika, to garnish

What you'll need:  Food processor, spatula

1.  Combine all ingredients except olive oil in food processor.  Pulse to begin breaking it down and then process continuously until texture just begins to smooth.
2.  Slowly drizzle olive oil while processing the mixture until it is smooth and uniform in texture.
3.  Can be served immediately but I recommend allowing the spread to chill, giving the flavors the opportunity to come together.
4.  Season additionally, if needed, and garnish with olive oil and smoked paprika before serving.

So much Yum, it can be hard to comprehend.  Some notes:  If you have Northern beans or Navy beans, they may be substituted in equal weight.  The texture will be different, but it will still be delicious.  Also, you may have wondered at the combo of mostly roasted garlic with a little sidekick action of raw garlic.  It gives it a good punch of flavor [wham!] and offers more depth and detail to the dish.
